Ingredients:

1 c. brown sugar
1 c. oil
3 eggs, beaten
2 c. zucchini, shredded
1 c. maple syrup
1 Tbs. vanilla extract
3 c. flour
1 tsp. salt
1 tsp. baking powder
1 c. raisins
1 c. walnuts

Directions:

Cream together sugar and oil, then add eggs, zucchini, maple syrup and vanilla. Mix well. Sift together dry ingredients and add to zucchini mixture. Stir in raisins and nuts. Pour into greased and floured loaf pan. Bake at 350° for 1 hour.

Tip: You can use frozen shredded zucchini in this recipe!  Just thaw, squeeze out the water through a cheesecloth or tea towel, and you’re all set!
