Ingredients:

2 c. all-purpose flour

2 c. sugar

2 tsp. baking soda

1 tsp. salt

2 tsp. cinnamon  

4 eggs

1 c. oil

4 c. grated carrots

1/2 c. chopped nuts

Directions:

Combine flour, sugar, baking soda, salt, and cinnamon. In a large bowl, beat eggs until frothy, then slowly beat in oil. Gradually add flour mixture, beating until smooth. Mix in carrots and walnuts. Pour into three greased and floured 8- or 9-in. pans. Bake at 350° for 20-25 minutes.
