Ingredients:
3/4 c. butter
1 c. sugar
1 tsp. vanilla extract
1/4 tsp. black walnut extract opt.
2 3/4 c. cake flour
3 tsp. baking powder
1 c. maple syrup
5 egg whites, beaten stiff

Directions:
Cream butter and sugar thoroughly, add vanilla and (opt.) black walnut extract. Sift together flour and baking powder and add to butter and sugar mixture alternately with syrup, beating well after each addition. Fold in stiffly beaten egg. Pour into two 9-inch layer pans and bake at 350° for about 30 minutes. Let cool and frost.
