
Ingredients:
1 c. butter, softened
1 c. maple syrup
1 1/2 Tbs. instant coffee
2 Tbs. hot water
2 tsp. vanilla extract or almond extract
1 c. all-purpose flour
1 tsp. baking soda
1 1/2 c. semisweet chocolate chips
1 1/2 c. walnuts, finely chopped
1/2 tsp. salt

Directions:
Cream butter in a large bowl, slowly adding maple syrup. Dissolve coffee in hot water, and beat into butter mixture, along with the extract. In separate bowl, mix both flours, walnuts, baking soda, and salt. Stir into the wet mixture gradually until the flour is fully incorporated. Add chocolate chips. Let batter sit for several minutes, then drop tablespoonfuls onto greased baking sheet. Bake at 350° for 15 minutes, or until edges start to brown.
