Ingredients:
3 Tbs. balsamic vinegar
2 tsp. maple syrup
1 Tbs. lime juice
1 clove minced garlic
1 tsp. cilantro, finely chopped
1 tsp. dry mustard
1 c. olive oil
salt and pepper to taste

Directions:
Combine the balsamic vinegar, maple syrup, lime juice, garlic, cilantro, and mustard in a food processor or blender. While processor is still running, slowly pour in oil until dressing is emulsified. Add salt and pepper to taste. Makes about 1 1/2 c., and may be stored in refrigerator for several weeks if tightly covered.
