Ingredients:

1 medium butternut squash (about 1 1/2 lb.)

1/4 maple syrup

1/4 tsp. ground mace

2/3 c. water

1/4 c. dark rum

 

Directions:

Peel, seed, and quarter butternut squash. Cut crosswise into 1/2 in. slices. Bring all the ingredients to a boil over medium-high heat. Reduce heat, cover, and simmer until tender. Transfer into a pre-warmed serving dish, reserving the liquid. Boil the remaining liquid on a high heat for 3 minutes until thickened, then pour over squash and serve.
