Ingredients:
3 medium carrots
3 medium parsnips
1 small yellow turnip
4 TBS. butter
1/2 c. maple syrup
1/2 c. bourbon or rum
salt and ground pepper

Directions:
Peel parsnips and carrots and cut them into 1 1/4 in. thick slices. Arrange vegetables in a single layer in a shallow pan. Heat butter and maple syrup for about 2 minutes or just until melted. Remove from heat and stir in rum. Pour mixture over the vegetables and toss to thoroughly coat, add salt and pepper to taste. Cover with aluminum foil and bake at 350° for 25 minutes. Remove from oven, stir the vegetables, and bake uncovered until tender for another 20-25 minutes.
