Ingredients:
1 c. sugar
3/4 c. milk
3 3/4 c. flour
1 tsp. vanilla
3/4 tsp. ginger
2 eggs
3/4 c. cold mashed potatoes
1/4 c. melted shortening
4 tsp. baking soda
Instructions:
Mix together sugar, eggs, milk, and potatoes. Add melted shortening and vanilla. Sift dry ingredients and add mixture. Chill mixture for 1 hour before frying. Roll out and then cut out doughnuts from batter. Fry doughnuts in oil set at 375°, and then wait until they have a golden brown color. Remove from fryer and then drain on a paper towel. Dip in maple glaze and serve!
