Ingredients:
1 pie crust shell
2 c. sweet potatoes, pureed
3 eggs, room temperature, slightly beaten
1/2 c. maple syrup, room temperature
1/4 tsp. salt
1 c. light cream
1 Tbs. blackstrap molasses
1 tsp. cinnamon
1 tsp. ground ginger

Directions:
Mix all filling ingredients and pour into pie shell. Bake at 425° for 10 minutes, then reduce heat to 325° and bake 35-45 minutes longer (or until well set).
